20

What you need:
112g butter
50g dark chocolate (minimum 75% cocoa solids), chopped
200g caster sugar
2 eggs
1 teaspoon vanilla extract
60g plain flour
1?4 teaspoon fine salt
1 teaspoon baking powder

What you do:
Preheat the oven to 175°C (340°F) Gas 4.

Melt the chocolate and butter in a heatproof bowl set over a pan of barely simmering water. Do not let the base of the bowl touch the water.

Stir occasionally until smooth. Remove from the heat and let cool a little. Stir in the sugar, eggs and vanilla extract.

Beat in the flour, salt and baking powder.

Spread half of the batter into the prepared baking pan. Add three quarters of the marshmallows.

Pour the other half of the brownie mixture over the chopped marshmallows and top with the rest of the marshmallows.

Bake in the preheated oven for 25-30 minutes, or until slightly springy in the middle. Leave to cool in the pan before removing and cutting into squares to serve.
